Gundira is a fruity, sweet, and elegant coffee, ideal for those seeking an aromatic and expressive cup. We find notes of grapefruit and honey, accompanied by a floral touch, with a balanced profile that becomes especially interesting as the cup cools.

It comes from Gundira Shela, in Kaffa, a region closely linked to the origin of Arabica coffee. There, Ephrem Mulugeta cultivates varieties 74110 and 74112 at an altitude of about 1,850 meters, surrounded by a forest ecosystem of great biodiversity.

Thanks to our Omniroast roasting, we recommend Gundira for espresso, Italian moka pot, and filter methods. It is available as whole bean coffee or ground coffee depending on your brewing method.

What does Gundira coffee taste like?

Gundira has a fruity, sweet, and floral profile. Grapefruit provides a citrusy and refreshing sensation that combines with a sweetness reminiscent of honey and a delicate floral touch.

Is it better to buy Gundira whole bean or ground?

You can buy Gundira as whole bean coffee or ground coffee. If you have a grinder, we recommend buying it whole bean and only grinding the necessary amount just before each preparation.

For an especially aromatic coffee like Gundira, grinding it just before brewing helps preserve its aromas and complexity better.

If you don't have a grinder, you can select ground coffee for your coffee maker and we will prepare the appropriate grind before shipping it.

Origin: Gundira Shela, Kaffa, Ethiopia

Gundira comes from the Gundira Shela farm, located in the Decha woreda, within the Kaffa region, southwest of Ethiopia. The farm is approximately 40 kilometers from Bonga and is part of a hundred-hectare property managed by Gushe Buna.

The coffee trees grow approximately 1,850 meters above sea level, on deep and fertile soils, in an environment of abundant rainfall and extraordinary biodiversity.

It is precisely this forest environment that is one of the aspects that make Gundira special. The coffee trees coexist with numerous species of native trees that provide shade and are part of an ecosystem closely linked to the history of coffee in Kaffa.

Ephrem Mulugeta, Gundira producer

Ephrem Mulugeta has been working in the coffee sector since 2001. His first steps were linked to the development of coffee nurseries before establishing his own farm in Kaffa.

Gundira Shela is located on the border between the Gundira and Shela kebeles. The farm has its own drying and storage facilities, while the processing station is approximately one kilometer away.

Since 2016, Ephrem's company has been directly marketing its coffees in international markets in Europe and the United States, working with quality lots and high traceability from their origin.

A coffee that grows within the forest

One of the most interesting characteristics of Gundira is the ecosystem in which its coffee trees grow. The farm is home to more than ten different species of trees that provide shade and help preserve the biodiversity of the environment.

Among them we find Qararo, an increasingly rare tree in Ethiopia that can reach about 40 meters in height, and Birbira, whose leaves, when decomposed, naturally contribute to nourishing the soil.

This combination of shade trees, volcanic soil, altitude, and abundant rainfall creates especially favorable conditions for the slow development of coffee cherries.

Natural process with 21 days of shade drying

Gundira is a natural process coffee. During the harvest, which takes place between November and January, ripe cherries are manually selected and picked.

Subsequently, the whole cherries are spread on African beds where they remain for approximately 21 days drying in the shade. The farm has about 200 beds dedicated to this process.

Shade drying allows for a slower and more uniform moisture loss. Compared to much more intense or fermentative naturals, the aim here is to preserve the delicacy of the coffee and achieve a clean, elegant, and defined natural.

Varieties 74110 and 74112

Gundira is composed of Ethiopian varieties 74110 and 74112. These are selections closely linked to modern Ethiopian coffee farming and adapted to the conditions of the country's producing areas.

In Gundira, they find an especially favorable environment thanks to the altitude, climate, and forest ecosystem of Kaffa, contributing to the aromatic, sweet, and complex character we find in the cup.

Kaffa: one of the places where the history of coffee begins

To speak of Gundira means to speak of one of the most important territories in the history of coffee. Kaffa, in southwestern Ethiopia, is recognized as one of the centers of origin and genetic diversity of wild Arabica coffee.

The importance of this ecosystem is such that in 2010 the Kafa area was incorporated into the UNESCO World Network of Biosphere Reserves. Its forests are home to wild coffee trees and an extraordinary genetic diversity of Coffea arabica.

Coffee has been deeply integrated into Ethiopian culture for centuries and later spread from the forests of southern Ethiopia to Yemen and, over time, to the rest of the world.

Gundira is born precisely in this territory. A coffee grown among the forests of Kaffa that allows us to connect a current cup of specialty coffee with one of the places most closely linked to the origin of Arabica coffee.

Every day from Monday to Friday we prepare orders for our transport agency to pick them up at 2pm. If we have all the coffees you have ordered and they are roasted, we will send them that same day. Otherwise we will do everything possible to get it out the next day. Our transport agency assures us of deliveries in 24-48 hours.
Example 1:
If you place the order on Sunday afternoon. Normally, if we have roasted all the coffees that you have ordered from us, on Monday morning we will prepare all the orders for the weekend and that Monday at 2:00 p.m. your order will already be on its way, in the hands of our agency. On many occasions it will be delivered the next day, Tuesday before 7pm, but on other occasions you will have to wait until Wednesday to receive your order. For your peace of mind, you will normally receive an email with which you can track it.

Example 2) worst case

If you place an order on Friday at noon, the normal thing is that we will not have time to prepare it and that the agency will not be able to pick it up until Monday at 2 p.m., and it may be that, as in example 1) your order will not arrive until Tuesday or Wednesday before 7 p.m.

If you place your order early on a Tuesday, it is likely (if we have all your coffees roasted) that your order will leave on Tuesday at 2:00 p.m. and if the agency delivers it to you in less than 24 hours, you will have your coffee on Wednesday before 7:00 p.m.

What is specialty coffee?

A specialty coffee is characterized by using high-quality beans that are grown in optimal conditions and harvested and processed with care.

This type of coffee is scored by certified cuppers and scores above 80 on the 100-point scale of the Specialty Coffee Association (SCA).

Although we at Artisan Coffee purchase the vast majority of our coffees above 85 SCA points.

When the coffee label or information says process: natural, what does it mean?

This information has little to do with what you usually find in supermarkets, and the only information you will have is whether it is natural roasted, blended or roasted (we talk about this below in another question).

When we talk about processes there are basically 3 types:

  1. Natural or Dried: In this method, the coffee fruits are dried in the sun immediately after harvesting, with the cherry still intact. Once dry, the pulp and skin are removed. This process can intensify the sweetness and give a fruity flavor to the coffee.
  2. Washed or Wet: Here, coffee cherries are pulped immediately after harvesting. The grains, still covered with mucilage, are fermented in water to break it down. They are then washed and dried. This method tends to highlight the acidity and flavor characteristics of the grain.
  3. Honey or Miel: This process is an intermediate point between natural and washed. After cherries are stripped of their skin, a layer of mucilage (which is sticky like honey, hence the name) is left around the kernel during drying. This method can result in a coffee with pronounced body and sweetness and mild acidity.

What is the degree of roasting and why is it important?

The degree of roast refers to how much a coffee bean has been roasted. Grades range from light roast, which retains many of the bean's natural flavors, to dark roast, which has a more roasted flavor and less of the bean's original flavors. In specialty coffee, the roast is carefully selected to highlight the unique flavors and characteristics of each bean.

In general, we apply a medium roast to our coffees, except in certain cases when we will apply a medium-low roast so as not to lose those delicate notes that tend to disappear with larger roasts.

We roast each coffee in a completely different way, and in our control tastings we define whether that coffee needs a different roast than the one we have done in order to further enhance its flavor notes.

I don't see in the info if the coffee is natural, blended or roasted?

All our coffees are Arabica and are roasted naturally , and in no case do we use roasting.

We only apply heat and do not add any extra ingredients, like roasting does, which adds sugar.

How does specialty coffee contribute to sustainability and environmental protection?

Many specialty coffee producers practice sustainable growing methods that protect the environment. This may include using shade to protect coffee plants and conserve biodiversity, water conservation through efficient irrigation systems, and composting coffee waste. Additionally, many specialty coffee producers receive a fair price for their product, allowing them to invest in sustainable agricultural practices.
